Had this recipe with supper last night. Yum! The original recipe is on Cooks.com (link provided below), and I just changed it up a bit to make it lighter in calories and sodium. I also lightened up the basil and thyme amounts, but if you use fresh herbs, use a tablespoon of each.
Oven Roasted Potatoes Recipe
Serves 4
- 2 lbs. medium red potatoes (about 6), washed and cut into approximately 2 inch pieces
- 1 tsp basil (dry)
- 1 tsp thyme (dry)
- 1/4 cup olive oil
- 1/2 cup Parmesan cheese (divided)
- 1 tsp seasoned salt
- pepper to taste
- Preheat oven to 425°F.
- Spray casserole dish or glass cake pan with cooking spray.
- Place potatoes in the dish/pan and drizzle with olive oil.
- Sprinkle spices and 1/4 cup of the cheese over potatoes and lightly toss to coat.
- Bake for for 30 minutes.
- Remove potatoes from oven. If they are getting dry, add a bit more olive oil, or spray tops of potatoes with cooking spray.
- Add remaining 1/4 of Parmesan cheese and lightly toss potatoes.
- Return to oven for 30 minutes or until they are roasted to the desired color and texture.
- Let stand for 3 minutes and serve warm.
